西(xi)鄉(xiang)松花(hua)蛋產于(yu)陜(shan)南(nan)漢(han)中(zhong)市西(xi)鄉(xiang)縣,是獨(du)具(ju)風味的(de)傳統(tong)名特(te)產品。“松花(hua)變蛋”在西(xi)鄉(xiang)縣眾多的(de)土(tu)特(te)產中(zhong)一(yi)直名列(lie)前茅,享有盛名。
西鄉縣松花(hua)蛋(dan)的(de)特(te)點是(shi):蛋(dan)體離(li)殼,易取易剝,以手搖(yao)之,有顫動感;剝去蛋(dan)殼,晶(jing)(jing)瑩油潤,呈(cheng)(cheng)透明的(de)茶褐(he)色(se),形(xing)似琥珀,具有彈性,表面滿(man)布美麗的(de)晶(jing)(jing)狀松枝(zhi)花(hua)紋;蛋(dan)黃略帶溏心,外圈墨晶(jing)(jing),內呈(cheng)(cheng)橘紅,油亮照人,層(ceng)次分明;咸淡(dan)適(shi)宜,柔軟細膩(ni),滑潤爽口,回味(wei)無窮。
西鄉松(song)(song)花(hua)(hua)蛋(dan)(dan)(dan),據(ju)記載(zai),源于清乾隆年(nian)間(jian)(公(gong)元1736—1795年(nian)),距今已有200余(yu)年(nian)的歷史(shi)。秦(qin)姓商(shang)(shang)人(ren)將腌制皮蛋(dan)(dan)(dan)之法傳人(ren)西鄉后,最(zui)初有私人(ren)商(shang)(shang)號“天生法”、“天同心(xin)(xin)”和“蘭芝軒”等(deng)作坊生產,制作。惟(wei)以(yi)“蘭芝軒”制作的松(song)(song)花(hua)(hua)蛋(dan)(dan)(dan),質優味佳,受人(ren)歡迎。舊《西鄉縣志》記載(zai):“松(song)(song)花(hua)(hua)蛋(dan)(dan)(dan)又名皮蛋(dan)(dan)(dan),加松(song)(song)枝灰制,若加竹葉、桃花(hua)(hua)灰亦可(ke)顯出松(song)(song)花(hua)(hua),以(yi)溏心(xin)(xin)最(zui)有名。行銷秦(qin)都、漢(han)口(kou)等(deng)地。售者裹以(yi)稻草(cao),五枚一串,繁如連珠,攜帶甚便,商(shang)(shang)旅過縣者無(wu)不購之”。這里古時交通不便,農(nong)家鴨蛋(dan)(dan)(dan)多供自食,禽蛋(dan)(dan)(dan)旺(wang)季,無(wu)法貯存(cun),每于春(chun)、秋(qiu)加工皮蛋(dan)(dan)(dan),旺(wang)為淡存(cun),終年(nian)享用。并(bing)作為商(shang)(shang)品遠近暢銷,久而久之,形(xing)成漢(han)中特產。
