主(zhu)席宴(yan)是火宮(gong)殿(dian)(dian)總經(jing)理譚飛先生帶領(ling)(ling)全體火宮(gong)殿(dian)(dian)人(ren),通過(guo)研(yan)究史料,走(zou)訪(fang)曾經(jing)為主(zhu)席服務的湘菜(cai)(cai)大(da)廚們,并反復研(yan)究,多次摸索最終(zhong)成型。主(zhu)席宴(yan)是以偉大(da)領(ling)(ling)袖毛主(zhu)席視察火宮(gong)殿(dian)(dian)時(shi)(shi)所品(pin)嘗的火宮(gong)殿(dian)(dian)美食為基準,結(jie)合毛澤東青(qing)年時(shi)(shi)代在火宮(gong)殿(dian)(dian)吃(chi)過(guo)的小吃(chi),以及(ji)主(zhu)席喜愛(ai)的湘菜(cai)(cai),組成一(yi)席。有六冷碟、十大(da)菜(cai)(cai)、兩隨菜(cai)(cai)、四點(dian)心,有的清鮮淡雅,有的色香味(wei)濃,都是原汁原味(wei)的湘菜(cai)(cai)、湘點(dian),經(jing)火宮(gong)殿(dian)(dian)的湘菜(cai)(cai)大(da)師們精烹細調,可(ke)讓(rang)您(nin)在一(yi)桌宴(yan)席中品(pin)味(wei)湖(hu)湘飲食文化、感悟偉人(ren)情懷。
六(liu)味迎賓:豆(dou)椒蒸火焙魚、紅椒腐乳、洋姜泡(pao)蒜(suan)、擂缽藠頭、臘八豆(dou)牛肉粒、油(you)辣白肉。
十大菜:紅燒肉、三鮮菠菜、水魚裙(qun)爪、酸辣羊肉、灰湯溫泉(quan)鴨、香辣百葉、軟蒸白鰱膽(dan)、煨(wei)牛蹄筋(jin)、東安仔雞、菌燴(hui)菜心。
兩(liang)隨(sui)菜:醬汁筍絲、蒜香大(da)片(pian)臘肉(rou)。
四(si)點心(xin):油(you)炸臭豆(dou)腐、蔥油(you)粑粑、腦髓(sui)卷、雞絲米粉。
精美水果。
1958年4月(yue)12日,毛(mao)(mao)(mao)澤(ze)東(dong)主(zhu)席(xi)在黃(huang)克誠將軍和時(shi)(shi)任湖(hu)南省(sheng)省(sheng)委書記周小(xiao)(xiao)舟的(de)(de)(de)陪同下(xia),神采奕奕地邁著健步來(lai)到(dao)火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)飲食店(dian)視察。時(shi)(shi)任火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)公方經理何(he)炳炎(yan)把(ba)毛(mao)(mao)(mao)主(zhu)席(xi)迎接到(dao)二樓雅座。在擺臺(tai)時(shi)(shi),毛(mao)(mao)(mao)主(zhu)席(xi)起身以(yi)一(yi)個(ge)普通勞動者(zhe)的(de)(de)(de)身份同何(he)炳炎(yan)一(yi)道鋪好(hao)桌布。然后,毛(mao)(mao)(mao)主(zhu)席(xi)問(wen)何(he):“火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)的(de)(de)(de)老人還(huan)在不(bu)(bu)在?生活過(guo)得好(hao)不(bu)(bu)好(hao)?長沙的(de)(de)(de)米多少錢(qian)一(yi)斤?”何(he)炳炎(yan)向主(zhu)席(xi)一(yi)一(yi)作了匯報。在點(dian)菜時(shi)(shi),非常熟悉火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)的(de)(de)(de)毛(mao)(mao)(mao)主(zhu)席(xi)笑著說(shuo):“吃(chi)(chi)點(dian)家常口味(wei),來(lai)點(dian)臭(chou)豆腐,東(dong)安(an)仔雞……就可以(yi)了。”廚(chu)房師傅聽說(shuo)是給毛(mao)(mao)(mao)主(zhu)席(xi)炒菜,個(ge)個(ge)心中又(you)驚又(you)喜,都想(xiang)拿出看(kan)家本領來(lai),一(yi)定要把(ba)飯菜做(zuo)得合主(zhu)席(xi)口味(wei)。當端上外(wai)焦內嫩(nen)的(de)(de)(de)臭(chou)豆腐時(shi)(shi),毛(mao)(mao)(mao)主(zhu)席(xi)邊(bian)吃(chi)(chi)邊(bian)說(shuo):“火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)的(de)(de)(de)臭(chou)豆腐,聞(wen)起來(lai)臭(chou),吃(chi)(chi)起來(lai)香。”主(zhu)席(xi)在火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)吃(chi)(chi)得很高興。臨走(zou)時(shi)(shi)對何(he)炳炎(yan)說(shuo):“火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)的(de)(de)(de)小(xiao)(xiao)吃(chi)(chi)、湘菜很著名,你們(men)應該保持它的(de)(de)(de)特點(dian),火(huo)(huo)宮(gong)殿(dian)(dian)(dian)(dian)是廣(guang)大群眾喜愛來(lai)的(de)(de)(de)地方,你們(men)還(huan)要把(ba)它搞得更好(hao)。”
