焦作(zuo)(zuo)的柿(shi)(shi)餅是(shi)(shi)河南(nan)省焦作(zuo)(zuo)市的地方特產,焦作(zuo)(zuo)人都把柿(shi)(shi)樹稱為(wei)鐵桿莊稼(jia),因(yin)為(wei)它不僅是(shi)(shi)時尚水果,而且還是(shi)(shi)農(nong)民(min)百姓經濟作(zuo)(zuo)物。在(zai)農(nong)民(min)的房前屋后(hou),山上山下廣為(wei)種植。
焦作柿(shi)餅是人們較(jiao)喜(xi)歡(huan)食用的果品,甜(tian)膩可口,營養豐富(fu)。吃(chi)些柿(shi)子對人體健康是很有益的。在《本草綱目》中記載“柿(shi)乃脾(pi)、肺、血分之(zhi)果也。其味甘而氣平,性澀而能收,故有健脾(pi)澀腸,治嗽止(zhi)血之(zhi)功。”
焦作所產(chan)的柿(shi)(shi)(shi)(shi)子(zi)果(guo)實扁圓(yuan)形,品質優良(liang),無核豐產(chan)。除作水果(guo)鮮(xian)食外(wai),多用(yong)于制成柿(shi)(shi)(shi)(shi)餅(bing),加(jia)工(gong)柿(shi)(shi)(shi)(shi)餅(bing)時用(yong)刀將柿(shi)(shi)(shi)(shi)皮去掉(diao),曬干,裝(zhuang)在(zai)大缸中用(yong)泥將口封嚴,柿(shi)(shi)(shi)(shi)子(zi)就悶(men)成一身白霜的柿(shi)(shi)(shi)(shi)餅(bing)。焦作柿(shi)(shi)(shi)(shi)餅(bing)與別處(chu)的柿(shi)(shi)(shi)(shi)餅(bing)不同之處(chu)就是用(yong)刀切(qie)開(kai)從橫剖面看到柿(shi)(shi)(shi)(shi)心空(kong),四下有裂紋,人稱(cheng)菊(ju)花心。可以用(yong)柿(shi)(shi)(shi)(shi)餅(bing)熬湯、做(zuo)糕點(dian)、甜點(dian)或點(dian)心餡。
