東莞(guan)菜(cai)屬于粵菜(cai)中(zhong)的廣(guang)州菜(cai)系(xi),以咸(xian)(xian)香帶(dai)點甜為(wei)主,味(wei)(wei)道略重,而(er)且肉類在(zai)其(qi)中(zhong)占了很大的比(bi)例,分(fen)山鄉(xiang)風(feng)味(wei)(wei)菜(cai)系(xi)、水鄉(xiang)風(feng)味(wei)(wei)菜(cai)系(xi)等,各有代表菜(cai)式,如大朗欖醬(jiang)炒飯、清溪茅根黃豆坑螺湯等,水鄉(xiang)風(feng)味(wei)(wei)有沙田蓮藕煲龍(long)骨湯、洪(hong)梅芋(yu)合干(gan)拗蜆肉、虎門(men)蜜汁烤鰻(man)魚、山鄉(xiang)風(feng)味(wei)(wei)里(li)有樟木頭客家咸(xian)(xian)雞等。
東(dong)(dong)莞(guan)(guan)的小(xiao)吃源(yuan)遠流長(chang),品種多(duo)達200多(duo)個,十分豐富(fu)。東(dong)(dong)莞(guan)(guan)小(xiao)吃主(zhu)要是農家自己制作的,幾乎每(mei)家每(mei)戶都會做。小(xiao)吃的原料主(zhu)要是米,具體又分糯米和(he)粳米兩種。東(dong)(dong)莞(guan)(guan)最(zui)著名的風(feng)味小(xiao)吃首推“三禾宴”和(he)厚街(jie)(jie)燒(shao)鵝瀨(lai)。其他的風(feng)味小(xiao)吃有厚街(jie)(jie)臘腸和(he)東(dong)(dong)莞(guan)(guan)米粉,道滘裹蒸粽和(he)肉丸(wan)(wan)粥,石(shi)龍(long)的麥芽(ya)糖和(he)糖柚皮(pi)、沙田的蓮(lian)藕、石(shi)碣的芙蓉(rong)肉和(he)芋桿子(zi),高埗的冼沙魚丸(wan)(wan),長(chang)安的烏頭魚等。
東莞(guan)(guan)市(shi)屬(shu)亞熱帶季(ji)風(feng)氣候,長夏無冬(dong),日照充(chong)足,雨量充(chong)沛(pei),溫差振幅小,季(ji)風(feng)明顯。主要特產(chan)有麻涌香蕉(jiao)、莞(guan)(guan)香、東莞(guan)(guan)臘腸、白沙(sha)油鴨、石(shi)龍(long)麥(mai)芽(ya)糖、東莞(guan)(guan)米粉、東莞(guan)(guan)荔枝、虎門膏蟹、石(shi)碣(jie)龍(long)眼等(deng)等(deng)。除此之外,由于東莞(guan)(guan)臨江面海,水產(chan)豐富(fu),海鮮也是特色之一,除了出名的膏蟹、重殼蟹、瀨尿蝦、石(shi)斑魚等(deng)等(deng),還以出產(chan)基圍蝦著名。
