1.尖椒(jiao)洗凈(jing),去蒂去籽,切成三角片(pian),蔥(cong)姜(jiang)蒜切碎;
2.土(tu)豆去皮洗凈,切成大小適口的滾刀塊,茄子洗凈,切滾刀塊;
3.鍋中(zhong)倒入油(you)燒熱,放入土豆塊炸(zha)至邊(bian)緣呈焦黃色,撈出瀝油(you),隨即下茄子炸(zha)稍(shao)軟后撈出瀝油(you);
4.鍋留底(di)油,爆香蔥姜蒜,放(fang)入尖椒(jiao)煸炒一(yi)下;
5.放入炸好(hao)的土豆塊和茄(qie)子(zi)塊翻炒,加入生抽、白(bai)糖、鹽炒勻入味即可;
