1、看色(se)澤(ze):良質豆(dou)(dou)腐干(gan),呈(cheng)乳(ru)白色(se)或淺黃色(se),有光澤(ze);次(ci)質豆(dou)(dou)腐干(gan),比正常豆(dou)(dou)腐干(gan)的顏色(se)深;劣質豆(dou)(dou)腐干(gan),色(se)澤(ze)呈(cheng)深黃色(se)略微發(fa)(fa)紅或發(fa)(fa)綠,無(wu)光澤(ze)或光澤(ze)不均勻(yun)。
2、看質(zhi)(zhi)(zhi)(zhi)地(di):良質(zhi)(zhi)(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)(zhi)(zhi)地(di)細(xi)膩,邊(bian)角(jiao)整齊(qi),有一(yi)定的彈(dan)性,切開(kai)處擠壓(ya)(ya)不(bu)出(chu)水,無(wu)雜質(zhi)(zhi)(zhi)(zhi);次質(zhi)(zhi)(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)(zhi)(zhi)地(di)粗糙,邊(bian)角(jiao)不(bu)齊(qi)或(huo)缺(que)損,彈(dan)性差且易被折粘,切口(kou)(kou)處可擠壓(ya)(ya)出(chu)水珠;劣質(zhi)(zhi)(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)(zhi)(zhi)地(di)粗糙無(wu)彈(dan)性,表面(mian)粘滑,切開(kai)時(shi)粘刀,切口(kou)(kou)擠壓(ya)(ya)時(shi)有水流出(chu)。
3、嘗味(wei)(wei)(wei)(wei)道:良質豆腐干(gan),具有豆腐干(gan)特(te)有的清香氣(qi)味(wei)(wei)(wei)(wei),無其(qi)他異味(wei)(wei)(wei)(wei),滋味(wei)(wei)(wei)(wei)純(chun)正,咸淡適口;劣質豆腐干(gan),有餿(sou)味(wei)(wei)(wei)(wei)、腐臭味(wei)(wei)(wei)(wei)、酸(suan)味(wei)(wei)(wei)(wei)、苦澀味(wei)(wei)(wei)(wei)等(deng)不良滋味(wei)(wei)(wei)(wei)。
