亳(bo)州(zhou)(zhou)粉(fen)(fen)皮主要流傳于(yu)亳(bo)州(zhou)(zhou)地區(qu)的傳統(tong)特(te)色食品(pin),最早記載于(yu)北魏《齊(qi)民要術》。將(jiang)綠豆(dou)、高粱、豌(wan)豆(dou)、山(shan)芋(yu)等加工成(cheng)淀(dian)(dian)粉(fen)(fen)(可(ke)混合用(yong),也可(ke)單獨(du)用(yong)),調(diao)成(cheng)稀糊(hu),用(yong)大鍋(guo)加水燒開(kai),用(yong)器皿取淀(dian)(dian)粉(fen)(fen)50克左右(you),放(fang)(fang)(fang)入特(te)制(zhi)的銅鏇(xuan)內(形(xing)似(si)平底(di)鍋(guo)),將(jiang)鏇(xuan)子(zi)(zi)(zi)放(fang)(fang)(fang)入沸水上轉動(dong),然后(hou)慢慢停(ting)止(zhi),淀(dian)(dian)粉(fen)(fen)糊(hu)在鏇(xuan)子(zi)(zi)(zi)內攤(tan)成(cheng)薄(bo)薄(bo)的一層,然后(hou)鏇(xuan)子(zi)(zi)(zi)內放(fang)(fang)(fang)入沸水,迅(xun)速(su)撈出放(fang)(fang)(fang)入涼水內,用(yong)手慢慢將(jiang)薄(bo)淀(dian)(dian)粉(fen)(fen)皮從鏇(xuan)子(zi)(zi)(zi)內扒掉,放(fang)(fang)(fang)在特(te)制(zhi)的高粱稈或葦子(zi)(zi)(zi)做成(cheng)的簾子(zi)(zi)(zi)上晾干即可(ke)。亳(bo)州(zhou)(zhou)粉(fen)(fen)皮筋(jin)骨強、色白(bai)、入口滑(hua)潤,可(ke)拌涼菜、也可(ke)燴、烹、燉、燒,是當地家家必備的日常用(yong)菜。亳(bo)州(zhou)(zhou)粉(fen)(fen)皮以銅關(guan)村生產的名氣最大。
粉(fen)皮(pi)是對用(yong)大米(mi)、紅薯(shu)淀(dian)(dian)粉(fen)、綠豆淀(dian)(dian)粉(fen)、馬鈴薯(shu)淀(dian)(dian)粉(fen)、蠶豆淀(dian)(dian)粉(fen)等,制作成薄片(pian)食物(wu)的統稱,有鮮干(gan)兩種,鮮的即可(ke)食用(yong),干(gan)的便(bian)于(yu)存放運銷。食慣嘴(zui)粉(fen)皮(pi)粉(fen)皮(pi)是用(yong)淀(dian)(dian)粉(fen)制成的傳統食品,適宜(yi)于(yu)農戶(hu)家庭(ting)制作,工具也很簡單,粉(fen)皮(pi)易做又經濟,可(ke)口又不膩,男女(nv)老少皆宜(yi)。
