①打(da)鹵:將羊肉剁成(cheng)粒;
②炒鍋放素油(you)燒熱,放花椒、桂(gui)皮炸出(chu)香(xiang)撈(lao)出(chu)不用,投入姜,蔥末,煸出(chu)香(xiang)味,放入肉末炒至八成熟,投入醬油(you),精鹽,辣椒末和鮮湯,胡椒粉改小火煨至羊肉酥爛即(ji)成澆(jiao)頭(tou);
③制栳(lao)栳(lao):將莜面倒(dao)(dao)入(ru)盆內加適量(liang)白面攪勻,倒(dao)(dao)入(ru)開水燙面,邊(bian)(bian)倒(dao)(dao)水邊(bian)(bian)攪拌,趁熱揉成若干(gan)個小面劑,逐個在鐵(tie)皮案上(shang)推(tui)成貓舌(she)狀,長10厘米,寬5厘米的薄片(pian),用右手揭起搭在二(er)拇指上(shang),卷(juan)成中間(jian)空的小卷(juan),豎在蒸籠(long)里(li),依次擺放,上(shang)急火蒸10分鐘即可;
④食時,將栳栳盛(sheng)在碗里,澆入鹵汁(zhi)撒(sa)上香菜末即可食用。
