祁(qi)(qi)門(men)(men)紅茶簡稱“祁(qi)(qi)紅”,是中國(guo)十大(da)名(ming)茶中唯一的紅茶,因產(chan)于(yu)安(an)徽省(sheng)祁(qi)(qi)門(men)(men)縣(xian)而得名(ming)。祁(qi)(qi)門(men)(men)產(chan)茶歷史悠久,可(ke)遠溯至南北朝(chao)時期。清代光(guang)緒二年(nian)(1876),祁(qi)(qi)門(men)(men)紅茶創制成功,一經問世,即以其超(chao)凡出眾的品(pin)質蜚聲中外(wai)。1915年(nian),祁(qi)(qi)紅參加“巴拿馬—太平(ping)洋國(guo)際博(bo)覽會(hui)”,榮(rong)獲金獎。1987年(nian),祁(qi)(qi)紅榮(rong)獲“第(di)26屆世界優質食(shi)品(pin)評選(xuan)大(da)會(hui)”金獎,祁(qi)(qi)門(men)(men)也被國(guo)家有關部門(men)(men)命名(ming)為“中國(guo)紅茶之鄉”。
傳統的(de)祁(qi)(qi)門紅(hong)(hong)(hong)(hong)茶(cha)全系手(shou)工(gong)(gong)制(zhi)(zhi)作,其質量取(qu)決(jue)于制(zhi)(zhi)作工(gong)(gong)夫,因(yin)此祁(qi)(qi)紅(hong)(hong)(hong)(hong)又(you)有“祁(qi)(qi)門工(gong)(gong)夫”之(zhi)稱。祁(qi)(qi)紅(hong)(hong)(hong)(hong)制(zhi)(zhi)作技藝分(fen)為初制(zhi)(zhi)和精制(zhi)(zhi)兩大部分(fen),其中(zhong)(zhong)初制(zhi)(zhi)包(bao)括(kuo)萎(wei)凋、揉捻、發(fa)酵(jiao)、干(gan)燥等(deng)工(gong)(gong)序,精制(zhi)(zhi)包(bao)括(kuo)篩分(fen)、切(qie)斷(duan)、風(feng)選(xuan)、揀剔、復火、勻堆(dui)等(deng)工(gong)(gong)序。制(zhi)(zhi)成的(de)祁(qi)(qi)紅(hong)(hong)(hong)(hong)色澤烏潤,條索緊細,鋒尖秀麗(li),沖泡(pao)時(shi)湯(tang)色紅(hong)(hong)(hong)(hong)艷透明(ming),葉底鮮紅(hong)(hong)(hong)(hong)明(ming)亮。祁(qi)(qi)紅(hong)(hong)(hong)(hong)最具魅力(li)的(de)是其香(xiang)氣,國內外茶(cha)師(shi)稱之(zhi)為“砂糖香(xiang)”或(huo)“蘋果香(xiang)”,其中(zhong)(zhong)又(you)蘊藏有蘭花(hua)香(xiang),芳馥持(chi)久(jiu),有“祁(qi)(qi)門香(xiang)”之(zhi)譽,祁(qi)(qi)紅(hong)(hong)(hong)(hong)也因(yin)此而名(ming)列(lie)世界高香(xiang)紅(hong)(hong)(hong)(hong)茶(cha)之(zhi)首。
近年來,由于受國內外(wai)茶(cha)葉市(shi)場行(xing)情(qing)的影響,祁(qi)(qi)門(men)(men)紅(hong)茶(cha)銷路不暢,傳統(tong)手(shou)工(gong)制作技(ji)藝也(ye)后繼乏人。為此,祁(qi)(qi)門(men)(men)縣(xian)委、縣(xian)政府(fu)專門(men)(men)制定(ding)發展規劃,采取了(le)多種有效(xiao)措(cuo)施,努(nu)力促進(jin)祁(qi)(qi)紅(hong)生產,以期振興(xing)和弘揚傳統(tong)的祁(qi)(qi)門(men)(men)紅(hong)茶(cha)制作技(ji)藝。
