大(da)足特產(chan)“寶頂牌冬菜”歷(li)經幾代人的(de)(de)不懈努(nu)力逐(zhu)漸由(you)小做大(da)。為適應時代的(de)(de)發展,產(chan)業的(de)(de)需(xu)求(qiu),由(you)家(jia)庭式作坊到成(cheng)(cheng)立重慶市(shi)鼎翔(xiang)農業發展有(you)限公司(si)。冬菜“白露播種(zhong),立春(chun)收獲”,整(zheng)個種(zhong)植過程不使用農藥(yao)、化肥,是綠色(se)(se)食品。因其生長(chang)季節在冬季,所以稱為“冬菜”。“冬菜”制作工藝復雜, 嫩尖腌制,需(xu)裝壇(tan)密(mi)封(feng),日(ri)曬夜露,自然(ran)發酵(jiao)三年后(hou)才窖熟開(kai)壇(tan)。制作過程不加任何香(xiang)精,色(se)(se)素。成(cheng)(cheng)品色(se)(se)澤黑褐油(you)潤,濃香(xiang)撲(pu)鼻,鮮(xian)嫩脆爽(shuang),素有(you) "七里香(xiang)","菜味精" 之美稱。
