桐城(cheng)豐(feng)糕(gao),潔(jie)白如霜,松泡綿軟,味鮮香甜,為安徽桐城(cheng)春節期(qi)間特有的(de)一種傳統糕(gao)類食品。此時(shi),家(jia)家(jia)戶戶都要制(zhi)作或購買豐(feng)糕(gao),以(yi)祈求來年吉祥(xiang)大發(fa),家(jia)興業旺。
豐糕(gao)的(de)傳統制作,是取(qu)(qu)上(shang)(shang)(shang)等秈米(mi)(mi),凈(jing)洗后(hou)(hou)用(yong)(yong)水(shui)浸(jin)泡,米(mi)(mi)入骨后(hou)(hou)磨出淀粉(fen),加(jia)白糖和渾(hun)酒(jiu)(jiu)(土法制糯米(mi)(mi)酒(jiu)(jiu)的(de)副產品,又稱“紅(hong)酒(jiu)(jiu)”)或(huo)“老面”,攪勻(yun)后(hou)(hou)發酵,等來了(le)浮(fu)子(糕(gao)粉(fen)發酵后(hou)(hou)浮(fu)在表層的(de)泡花(hua)),即(ji)(ji)(ji)可上(shang)(shang)(shang)蒸籠(long)(long)(long)蒸。蒸籠(long)(long)(long)要(yao)一(yi)籠(long)(long)(long)籠(long)(long)(long)地(di)上(shang)(shang)(shang)。取(qu)(qu)糕(gao)粉(fen)適量(liang),下(xia)堿水(shui)中和,上(shang)(shang)(shang)籠(long)(long)(long)前(qian)(qian)再(zai)下(xia)適量(liang)小(xiao)蘇(su)打水(shui)“提泡”。如蒸“葷糕(gao)”,同時放入一(yi)些切成一(yi)厘米(mi)(mi)見方的(de)板豬油塊。上(shang)(shang)(shang)籠(long)(long)(long)時要(yao)用(yong)(yong)猛火(huo)。約蒸四(si)十(shi)(shi)多分(fen)鐘,上(shang)(shang)(shang)第二(er)籠(long)(long)(long),同時將前(qian)(qian)一(yi)籠(long)(long)(long)調(diao)至(zhi)高格。如此一(yi)籠(long)(long)(long)籠(long)(long)(long)地(di)上(shang)(shang)(shang),直至(zhi)手夠不上(shang)(shang)(shang)時止。取(qu)(qu)糕(gao)時,可用(yong)(yong)一(yi)只筷子從(cong)糕(gao)的(de)正中插入,如拔(ba)起時不粘糕(gao),說明糕(gao)已熟(shu)透即(ji)(ji)(ji)可取(qu)(qu)籠(long)(long)(long)。取(qu)(qu)出的(de)糕(gao),放置通(tong)風處(chu)涼十(shi)(shi)多分(fen)鐘,即(ji)(ji)(ji)可用(yong)(yong)食用(yong)(yong)色素在糕(gao)面上(shang)(shang)(shang)書寫(xie)“恭喜發財”、“健康長壽”、“國泰平安”之類的(de)吉祥(xiang)語,以表達人們美好的(de)愿望。
