桐(tong)城豐糕(gao),潔白如霜(shuang),松泡(pao)綿軟(ruan),味鮮(xian)香甜(tian),為安(an)徽桐(tong)城春節期(qi)間(jian)特(te)有的(de)一種傳統糕(gao)類(lei)食(shi)品(pin)。此時,家家戶(hu)戶(hu)都要制(zhi)作或購買豐糕(gao),以(yi)祈求來年吉祥大發,家興業旺(wang)。
豐糕(gao)(gao)的傳統(tong)制(zhi)作,是取(qu)(qu)上(shang)等(deng)秈米(mi)(mi),凈洗后用水(shui)浸泡(pao),米(mi)(mi)入(ru)(ru)骨后磨出淀粉(fen),加(jia)白糖和渾酒(土法制(zhi)糯米(mi)(mi)酒的副產品,又稱(cheng)“紅酒”)或“老面(mian)”,攪(jiao)勻后發(fa)酵,等(deng)來了浮子(糕(gao)(gao)粉(fen)發(fa)酵后浮在表層的泡(pao)花),即可上(shang)蒸(zheng)(zheng)籠(long)蒸(zheng)(zheng)。蒸(zheng)(zheng)籠(long)要(yao)一籠(long)籠(long)地上(shang)。取(qu)(qu)糕(gao)(gao)粉(fen)適量,下(xia)堿水(shui)中和,上(shang)籠(long)前再下(xia)適量小(xiao)蘇打水(shui)“提泡(pao)”。如(ru)(ru)蒸(zheng)(zheng)“葷糕(gao)(gao)”,同(tong)時放(fang)入(ru)(ru)一些切成一厘米(mi)(mi)見方的板(ban)豬(zhu)油塊。上(shang)籠(long)時要(yao)用猛(meng)火。約蒸(zheng)(zheng)四十多分(fen)鐘,上(shang)第二籠(long),同(tong)時將前一籠(long)調至高格。如(ru)(ru)此一籠(long)籠(long)地上(shang),直(zhi)至手(shou)夠不(bu)上(shang)時止。取(qu)(qu)糕(gao)(gao)時,可用一只筷(kuai)子從糕(gao)(gao)的正中插入(ru)(ru),如(ru)(ru)拔起時不(bu)粘(zhan)糕(gao)(gao),說明糕(gao)(gao)已熟透即可取(qu)(qu)籠(long)。取(qu)(qu)出的糕(gao)(gao),放(fang)置(zhi)通風處涼十多分(fen)鐘,即可用食用色素在糕(gao)(gao)面(mian)上(shang)書寫“恭(gong)喜發(fa)財”、“健(jian)康長壽”、“國泰平安”之類的吉祥語,以表達人們(men)美(mei)好的愿望。
