一、桐城水碗是什么
桐城水碗又名桐城水席,安徽桐城的傳統名食。“水碗”系湯菜類食物,盤、碟都無法盛裝,須采用粗瓷藍花大碗盛裝。“水(shui)(shui)碗”選料精良,諸如(ru)肉類、禽類、蛋(dan)類、大(da)棗(zao)、蓮子及豆制品等(deng)(deng)等(deng)(deng),都是新鮮優質品。“水(shui)(shui)碗”做工考(kao)究,花樣異彩紛呈(cheng),多達數十種(zhong),老少咸(xian)宜。為方便廣大(da)顧(gu)客可(ke)零(ling)碗單(dan)色(se)下(xia)吃,亦可(ke)承辦多色(se)水(shui)(shui)碗宴席。日(ri)常供應的水(shui)(shui)碗大(da)眾化,常見(jian)花樣有肉片(pian)水(shui)(shui)碗,肉元水(shui)(shui)碗,魚片(pian)水(shui)(shui)碗,魚元水(shui)(shui)碗,蛋(dan)條(tiao)水(shui)(shui)碗,蛋(dan)元水(shui)(shui)碗等(deng)(deng)。
二、桐城水碗的歷史典故
“水碗”的(de)歷史(shi)由來最早(zao)可追溯(su)到明(ming)朝。相(xiang)傳,明(ming)朝宰相(xiang)何(he)如寵,屢立功績(ji)(ji),皇帝(di)(di)便問他:想要什么賞賜?何(he)如寵答:給我家鄉(xiang)桐(tong)(tong)城(cheng)(cheng)修一道(dao)灌溉(gai)農田的(de)水渠吧?皇帝(di)(di)先(xian)略有(you)遲疑,但(dan)(dan)念(nian)其功績(ji)(ji)最終還是允許了(le)。次年,皇帝(di)(di)下(xia)江南(nan)路過桐(tong)(tong)城(cheng)(cheng),看見清亮(liang)亮(liang)的(de)流水嘩啦(la)啦(la)地流進(jin)干涸的(de)農田,心(xin)里(li)很(hen)是自豪。當地百姓(xing)得知(zhi)皇帝(di)(di)到此,更是感恩不(bu)盡。心(xin)想,皇帝(di)(di)來了(le)總得表示表示吧,但(dan)(dan)鄉(xiang)下(xia)地方也沒有(you)什么好東西,于是就(jiu)將瘦(shou)肉、豬肝用山芋(yu)粉攥(zuan)攥(zuan)下(xia)鍋里(li)汆汆和(he)雞蛋、菌(jun)菇(gu)等多種食材(cai)燴在一起后(hou),盛入(ru)藍花大碗中。皇帝(di)(di)一嘗(chang),鮮嫩柔(rou)滑、油而不(bu)膩,遂龍顏大悅(yue)問:此為(wei)何(he)菜?百姓(xing)一拍腦袋答:此乃“水碗”。故此得名(ming):“桐(tong)(tong)城(cheng)(cheng)水碗”。經后(hou)世不(bu)斷創新改良,成為(wei)一道(dao)做工考究、花樣多彩、老少咸宜當地風味名(ming)菜,名(ming)揚省內(nei)外。
