安鋪(pu)年(nian)(nian)糕(gao)(gao)是(shi)廣東省湛江廉江市安鋪(pu)的(de)傳統特色美食,年(nian)(nian)糕(gao)(gao)和(he)(he)安鋪(pu)一樣都(dou)是(shi)有(you)(you)歷史性的(de),安鋪(pu)年(nian)(nian)糕(gao)(gao)有(you)(you)著悠(you)久的(de)歷史。很(hen)久以前,每逢過年(nian)(nian),安鋪(pu)人都(dou)會(hui)做(zuo)“駝(tuo)衣仔”。制(zhi)作方式十分簡單,就是(shi)將糯米(mi)、片糖、面粉做(zuo)成(cheng)(cheng)(cheng)面團,然后加入花生和(he)(he)椰子絲(si),有(you)(you)咸味也有(you)(you)甜味,最后用(yong)葉子包(bao)起來,蒸(zheng)熟即(ji)成(cheng)(cheng)(cheng)。過年(nian)(nian)時,老(lao)百(bai)姓就會(hui)拿給(gei)家(jia)人吃(chi)或者(zhe)送朋友,但保質(zhi)期頂多是(shi)2天。上(shang)世紀50年(nian)(nian)代(dai)后,“駝(tuo)衣仔”變成(cheng)(cheng)(cheng)“大米(mi)乙”,制(zhi)作方式相似,用(yong)爐火炊熟。直到(dao)上(shang)世紀80年(nian)(nian)代(dai),“大米(mi)乙”逐漸變成(cheng)(cheng)(cheng)“年(nian)(nian)糕(gao)(gao)”。傳統的(de)年(nian)(nian)糕(gao)(gao)也是(shi)采用(yong)糯米(mi)、白砂糖和(he)(he)花生油等材料制(zhi)作而(er)成(cheng)(cheng)(cheng)。不同(tong)的(de)是(shi),年(nian)(nian)糕(gao)(gao)的(de)味道香滑可口(kou),使(shi)用(yong)真空包(bao)裝,保質(zhi)期可以達到(dao)60天。
安鋪(pu)年(nian)(nian)(nian)(nian)糕有黃、白兩色,象征金銀,年(nian)(nian)(nian)(nian)糕又稱(cheng)“年(nian)(nian)(nian)(nian)年(nian)(nian)(nian)(nian)糕”,與“年(nian)(nian)(nian)(nian)年(nian)(nian)(nian)(nian)高(gao)”諧音,寓(yu)意(yi)著人(ren)們的(de)工作和生活一年(nian)(nian)(nian)(nian)比一年(nian)(nian)(nian)(nian)提高(gao)。所以前人(ren)有詩(shi)稱(cheng)年(nian)(nian)(nian)(nian)糕:“人(ren)心多(duo)好高(gao),諧聲制食品,義取年(nian)(nian)(nian)(nian)勝(sheng)年(nian)(nian)(nian)(nian),籍以祈(qi)歲(sui)(sui)諗”,“年(nian)(nian)(nian)(nian)糕寓(yu)意(yi)稍(shao)云深,白色如銀黃色金。年(nian)(nian)(nian)(nian)歲(sui)(sui)盼高(gao)時時利(li),虔誠默祝望財臨。”現在安鋪(pu)過(guo)年(nian)(nian)(nian)(nian)送禮(li)大家(jia)都會選擇傳(chuan)統的(de)安鋪(pu)年(nian)(nian)(nian)(nian)糕,過(guo)年(nian)(nian)(nian)(nian)家(jia)家(jia)戶(hu)戶(hu)都會挑上年(nian)(nian)(nian)(nian)糕作為大家(jia)送禮(li)的(de)佳(jia)品。
