即墨麻片(pian)是山東省傳統的特色(se)名點(dian)。麻片(pian)呈淺黃(huang)色(se),厚度(du)1.5毫(hao)米,具有香(xiang)、脆、甜等特點(dian),在全省享有盛譽。即墨麻片(pian)的主要原料有面粉、白糖、花生油、芝麻仁(ren)、水等。
將(jiang)(jiang)白糖用開(kai)水溶(rong)解,待涼透后(hou)(hou)加入花(hua)生油(you)攪(jiao)勻,陸續加面(mian)(mian)(mian)粉(fen)調成(cheng)糊狀,再加面(mian)(mian)(mian)粉(fen)揉到(dao)軟硬適度,隨之將(jiang)(jiang)面(mian)(mian)(mian)團搟(xian)成(cheng)非常細薄,好似(si)一(yi)吹即破的面(mian)(mian)(mian)餅。然后(hou)(hou),把餅表(biao)面(mian)(mian)(mian)面(mian)(mian)(mian)粉(fen)掃掉,割(ge)齊邊,刷上(shang)水,均勻地撒(sa)上(shang)芝麻(ma)仁,用走(zou)錘壓(ya)實(shi)后(hou)(hou),切成(cheng)長片,放到(dao)烤盤上(shang)烤熟,香(xiang)、脆、酥(su)、甜的淺黃色麻(ma)片就成(cheng)功出爐(lu)。
