龍(long)巖冬(dong)(dong)(dong)(dong)至(zhi)包(bao)新羅(luo)區(qu)本地稱馃勾(gou)仔,龍(long)巖話讀音為(wei)kue kau a(采(cai)用國際音標),靠近漳(zhang)(zhang)平(ping)的(de)白沙鎮(zhen)跟漳(zhang)(zhang)平(ping)市一樣(yang)大多叫菜包(bao)粿。冬(dong)(dong)(dong)(dong)至(zhi)包(bao)為(wei)閩西(包(bao)括龍(long)巖和(he)三(san)明(ming)寧(ning)化地區(qu))人冬(dong)(dong)(dong)(dong)至(zhi)時節傳統(tong)美食,幾乎為(wei)新羅(luo)和(he)漳(zhang)(zhang)平(ping)兩個區(qu)市冬(dong)(dong)(dong)(dong)至(zhi)必備食品。經水(shui)(shui)浸泡后的(de)糯米(mi)蒸熟經過手工(gong)木(mu)錘在石臼中錘打(da)出來成(cheng)米(mi)粿再加工(gong)成(cheng)粿皮(pi)(如今大多數是把(ba)浸泡一個晚上的(de)糯米(mi)拿出粉(fen)碎(sui)后和(he)水(shui)(shui)做成(cheng)米(mi)皮(pi)),餡(xian)料有冬(dong)(dong)(dong)(dong)筍(sun)(沒有冬(dong)(dong)(dong)(dong)筍(sun)時用筍(sun)干代替)、五(wu)花肉、蔥(cong)、香菇、酸菜等(deng)。寓意來年豐(feng)收年順。米(mi)馃不僅有白色(se)的(de),也(ye)有綠(lv)(lv)色(se)的(de)(龍(long)巖城區(qu)以綠(lv)(lv)色(se)為(wei)主),綠(lv)(lv)色(se)的(de)是主要(yao)在米(mi)皮(pi)中加入搗(dao)爛的(de)艾(ai)(ai)草或者清(qing)明(ming)草(鼠曲(qu)草),有時候(hou)找(zhao)不到艾(ai)(ai)草和(he)清(qing)明(ming)草時也(ye)有用其他綠(lv)(lv)色(se)蔬菜的(de)汁做的(de)。一般包(bao)成(cheng)三(san)角形(xing)或月牙形(xing)(形(xing)似(si)大號餃子)。
餡以(yi)冬(dong)筍(sun)和(he)糟(zao)菜(cai)兩(liang)種為主,口味方(fang)面就是按各自的(de)喜好來(lai)制作(zuo)。例(li)如(ru)花生之類的(de)甜味糕點,制作(zuo)糕點需要采取糯米和(he)大米按照(zhao)四比六成(cheng)分,然(ran)后加入艾草或清明(ming)草打(da)成(cheng)粉末狀(zhuang),加入適量的(de)水揉成(cheng)軟硬適中的(de)米團(tuan)做(zuo)成(cheng)馃皮,然(ran)后加入之前(qian)做(zuo)好的(de)餡料,捏(nie)成(cheng)三角(jiao)或是兩(liang)角(jiao)的(de)形狀(zhuang)后放(fang)(fang)在粽(zong)葉上或放(fang)(fang)進(jin)白色小塑料食(shi)品袋里上鍋蒸(zheng)至30-45分鐘,即可蒸(zheng)熟(shu)。
