清乾隆年間,南(nan)充(chong)醬園(yuan)主張德興,見嘉陵江邊盛產(chan)芥(jie)菜,他突發(fa)奇(qi)想,將新(xin)鮮芥(jie)菜配(pei)以鹽(yan)和香(xiang)(xiang)料,裝入土陶(tao)圓(yuan)壇密封后放置醬園(yuan)內(nei)。事隔三年,恰逢立春之(zhi)日,醬園(yuan)內(nei)忽然(ran)飄出(chu)一(yi)(yi)股奇(qi)特(te)的香(xiang)(xiang)味,原來(lai)是那個土陶(tao)圓(yuan)壇突然(ran)破裂,芳香(xiang)(xiang)四(si)(si)溢,沁人心脾,眾人聞香(xiang)(xiang)而至紛紛品嘗(chang),果然(ran)是爽(shuang)口。此菜歷經(jing)三個寒冬(dong)(dong),立春之(zhi)日噴香(xiang)(xiang)而出(chu),眾人取名為(wei)"冬(dong)(dong)菜"。一(yi)(yi)傳(chuan)(chuan)十(shi),十(shi)傳(chuan)(chuan)百,傳(chuan)(chuan)至京城(cheng),成為(wei)朝廷貢品。時有民(min)謠"十(shi)里飄香(xiang)(xiang)不是花(hua),順慶府中冬(dong)(dong)菜牙(ya)",十(shi)里午南(nan)充(chong)冬(dong)(dong)菜由此誕生,經(jing)過幾百年代代相傳(chuan)(chuan),十(shi)里香(xiang)(xiang)南(nan)充(chong)冬(dong)(dong)菜成為(wei)四(si)(si)川四(si)(si)大名菜之(zhi)一(yi)(yi)。我公(gong)司承傳(chuan)(chuan)"南(nan)充(chong)醬園(yuan),德興老號",秉承百年傳(chuan)(chuan)統工(gong)藝,發(fa)揚(yang)光大,使十(shi)里香(xiang)(xiang)南(nan)充(chong)冬(dong)(dong)菜這一(yi)(yi)獨特(te)的地(di)方(fang)特(te)日臻完美,名揚(yang)海內(nei)外。

南(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)譽(yu)滿全國(guo)、四(si)(si)(si)川四(si)(si)(si)大(da)名(ming)菜(cai)之一。南(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)生產加工(gong)歷史悠久,距今已有225年(nian)。《南(nan)充(chong)(chong)縣志》中有這樣的記載:"清(qing)嘉慶(qing)年(nian)間(1796至1820),順慶(qing)就有冬(dong)(dong)(dong)菜(cai)出售。""道光年(nian)間(1821至1850),縣人(ren)張德(de)興在縣城(cheng)經營德(de)興老號醬園(yuan)鋪,制作冬(dong)(dong)(dong)菜(cai),頗有名(ming)氣。"1981年(nian)南(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)在四(si)(si)(si)川省(sheng)"四(si)(si)(si)菜(cai)"評比會上,以光澤油潤、清(qing)香脆嫩(nen)、風味濃郁(yu)取勝,評為全省(sheng)第一名(ming)。南(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)與(yu)涪陵榨菜(cai)、宜賓芽(ya)菜(cai)、內江(jiang)大(da)頭(tou)菜(cai)并稱為四(si)(si)(si)川"四(si)(si)(si)大(da)名(ming)腌菜(cai)"。
南充冬(dong)(dong)菜(cai)(cai)以(yi)芥菜(cai)(cai)為原(yuan)料,花(hua)椒(jiao)、八(ba)角等香辛料為輔料,經過(guo)20道工(gong)序,歷時1-3年(nian)加工(gong)而成。既可(ke)用作餐桌(zhuo)上的(de)小菜(cai)(cai),又可(ke)作為烹飪的(de)佐料使用。川(chuan)菜(cai)(cai)中有名(ming)的(de)冬(dong)(dong)菜(cai)(cai)扣(kou)肉和(he)冬(dong)(dong)菜(cai)(cai)擔(dan)擔(dan)面等都是以(yi)南充冬(dong)(dong)菜(cai)(cai)為主要(yao)原(yuan)料。
南充冬(dong)菜(cai)菜(cai)型均勻,褐黑色、油潤、有(you)(you)光澤;具有(you)(you)南充冬(dong)菜(cai)獨有(you)(you)的醬香味(wei)(wei)和辛香味(wei)(wei),香氣濃郁;味(wei)(wei)道(dao)鮮美、質(zhi)地脆嫩、咸(xian)淡(dan)適口。富含氨基酸、乳酸、蛋白質(zhi)、維生(sheng)素和多種微量元素。有(you)(you)開胃健脾、增(zeng)進食欲、增(zeng)強人體(ti)機(ji)能之(zhi)功效。
