沙子(zi)(zi)饃是(shi)(shi)特有(you)的(de)(de)(de)(de)面(mian)(mian)點(dian)小(xiao)吃,因(yin)制作(zuo)簡單(dan)、口感(gan)良好(hao)、倍受群眾歡迎。做得好(hao)的(de)(de)(de)(de)砂(sha)子(zi)(zi)饃掰開(kai)后,能清(qing)楚(chu)地看(kan)見(jian)里面(mian)(mian)的(de)(de)(de)(de)一(yi)(yi)層(ceng)(ceng)層(ceng)(ceng)酥,五六(liu)層(ceng)(ceng)之(zhi)多(duo)。一(yi)(yi)般人(ren)做砂(sha)子(zi)(zi)饃是(shi)(shi)用(yong)(yong)(yong)(yong)(yong)豬油(you)(you),但好(hao)的(de)(de)(de)(de)沙子(zi)(zi)饃要(yao)用(yong)(yong)(yong)(yong)(yong)麻(ma)油(you)(you),而且在和(he)(he)面(mian)(mian)時(shi)講究風向(xiang)。若(ruo)是(shi)(shi)南風,就少加點(dian)水把(ba)面(mian)(mian)和(he)(he)干(gan);若(ruo)是(shi)(shi)北風,就多(duo)加點(dian)水把(ba)面(mian)(mian)和(he)(he)清(qing)點(dian),因(yin)為南風漲朝,北風收潮。把(ba)面(mian)(mian)揉開(kai)后,抹(mo)一(yi)(yi)層(ceng)(ceng)麻(ma)油(you)(you)后又合攏揉勻,如(ru)此反(fan)復五六(liu)次,面(mian)(mian)團和(he)(he)好(hao)放(fang)(fang)著待用(yong)(yong)(yong)(yong)(yong),做砂(sha)子(zi)(zi)饃多(duo)用(yong)(yong)(yong)(yong)(yong)桶爐,其爐面(mian)(mian)形似“雞窩灶(zao)”,便于(yu)(yu)放(fang)(fang)鍋(guo)(guo),爐子(zi)(zi)旁邊有(you)一(yi)(yi)個二層(ceng)(ceng)的(de)(de)(de)(de)木架,便于(yu)(yu)操(cao)(cao)作(zuo)和(he)(he)擺放(fang)(fang)用(yong)(yong)(yong)(yong)(yong)具。其操(cao)(cao)作(zuo)過程是(shi)(shi):將(jiang)干(gan)凈的(de)(de)(de)(de)鵝(e)(e)卵(luan)石(直徑不足(zu)一(yi)(yi)寸)放(fang)(fang)入(ru)鐵(tie)鍋(guo)(guo)預熱,不時(shi)加入(ru)食油(you)(you)攪拌鵝(e)(e)卵(luan)石,待鵝(e)(e)卵(luan)石在鍋(guo)(guo)內發(fa)燙時(shi),鏟出一(yi)(yi)半放(fang)(fang)入(ru)備(bei)用(yong)(yong)(yong)(yong)(yong)鍋(guo)(guo)中(zhong),再(zai)用(yong)(yong)(yong)(yong)(yong)鍋(guo)(guo)鏟扒(ba)平鐵(tie)鍋(guo)(guo)內的(de)(de)(de)(de)鵝(e)(e)卵(luan)石,將(jiang)一(yi)(yi)尺見(jian)方的(de)(de)(de)(de)面(mian)(mian)餅蓋于(yu)(yu)其上,再(zai)將(jiang)備(bei)出的(de)(de)(de)(de)鵝(e)(e)卵(luan)石置于(yu)(yu)面(mian)(mian)餅上面(mian)(mian),利用(yong)(yong)(yong)(yong)(yong)上下的(de)(de)(de)(de)熱石子(zi)(zi)將(jiang)面(mian)(mian)餅烤熟。
砂(sha)子饃(mo)做(zuo)(zuo)得(de)最好的(de)要數喻(yu)連(lian)茍 ,喻(yu)連(lian)茍做(zuo)(zuo)砂(sha)子饃(mo)十分講究,每烤一個砂(sha)子饃(mo)后,還要用干(gan)凈抹布把(ba)鍋里的(de)鵝卵石抹一下,炒石子的(de)油也(ye)放得(de)多(duo)些,所(suo)以他做(zuo)(zuo)的(de)砂(sha)子饃(mo)相當俏銷,總是供(gong)不應求,形(xing)成(cheng)長江埠獨(du)有的(de)特(te)產而(er)享譽(yu)四方(fang),并傳承至今。
先將(jiang)(jiang)(jiang)適(shi)量(liang)的(de)(de)(de)(de)(de)砂(sha)(sha)(sha)子(zi)(大(da)小如同板栗的(de)(de)(de)(de)(de)鵝卵石)淘洗干(gan)凈,吹干(gan)后待用(yong)(yong)(yong)(yong)。鐵鍋燒(shao)熱(re)后倒入(ru)食(shi)用(yong)(yong)(yong)(yong)油,待鍋內食(shi)用(yong)(yong)(yong)(yong)油燒(shao)熟后再(zai)(zai)將(jiang)(jiang)(jiang)砂(sha)(sha)(sha)子(zi)倒入(ru)鐵鍋內然(ran)后反復攪拌,使砂(sha)(sha)(sha)子(zi)均勻(yun)(yun)升(sheng)溫制作(zuo)中,將(jiang)(jiang)(jiang)面(mian)(mian)粉(fen)(fen)加(jia)水揉(rou)(rou)勻(yun)(yun),揉(rou)(rou)勻(yun)(yun)后不斷抹(mo)麻油反復再(zai)(zai)揉(rou)(rou),如此反復五、六次,面(mian)(mian)團(tuan)揉(rou)(rou)好后掐(qia)一(yi)(yi)塊1-2兩(liang)大(da)小的(de)(de)(de)(de)(de)面(mian)(mian)砣(tuo),加(jia)入(ru)蔥(cong)、蒜(suan)、鹽、孜然(ran)粉(fen)(fen)、辣椒(jiao)、豬油等各種(zhong)調料,再(zai)(zai)用(yong)(yong)(yong)(yong)檊面(mian)(mian)棍(gun)把面(mian)(mian)團(tuan)檊成一(yi)(yi)尺見方(fang)的(de)(de)(de)(de)(de)圓狀薄餅(bing)(bing)待用(yong)(yong)(yong)(yong)待鵝卵石在鍋內冒(mao)煙發(fa)燙時,鏟(chan)出一(yi)(yi)半放(fang)入(ru)備用(yong)(yong)(yong)(yong)鍋中,再(zai)(zai)用(yong)(yong)(yong)(yong)鍋鏟(chan)扒平(ping)鐵鍋內的(de)(de)(de)(de)(de)鵝卵石,將(jiang)(jiang)(jiang)一(yi)(yi)尺見方(fang)的(de)(de)(de)(de)(de)面(mian)(mian)餅(bing)(bing)蓋于其上,再(zai)(zai)將(jiang)(jiang)(jiang)備出的(de)(de)(de)(de)(de)鵝卵石置于面(mian)(mian)餅(bing)(bing)上面(mian)(mian),利用(yong)(yong)(yong)(yong)上壓(ya)下擠(ji)的(de)(de)(de)(de)(de)熱(re)石子(zi)將(jiang)(jiang)(jiang)面(mian)(mian)餅(bing)(bing)烙烤而熟。 制作(zuo)得好的(de)(de)(de)(de)(de)砂(sha)(sha)(sha)子(zi)饃(mo)(mo)用(yong)(yong)(yong)(yong)手掰開后,能(neng)清楚地看見里面(mian)(mian)的(de)(de)(de)(de)(de)一(yi)(yi)層(ceng)(ceng)層(ceng)(ceng)酥,有五、六層(ceng)(ceng)之(zhi)多(duo)。一(yi)(yi)般(ban)人(ren)做砂(sha)(sha)(sha)子(zi)饃(mo)(mo)是用(yong)(yong)(yong)(yong)豬油,但(dan)好的(de)(de)(de)(de)(de)沙(sha)子(zi)饃(mo)(mo)要用(yong)(yong)(yong)(yong)麻油。砂(sha)(sha)(sha)子(zi)饃(mo)(mo)經過(guo)制作(zuo)者的(de)(de)(de)(de)(de)多(duo)次改良(liang)后,添加(jia)了各種(zhong)不周的(de)(de)(de)(de)(de)營(ying)養(yang)成份,適(shi)宜(yi)不同人(ren)的(de)(de)(de)(de)(de)口味,具有溫肝腎、暖胃氣等功效。
