湖北九(jiu)黃餅是(shi)荊州傳(chuan)統(tong)特(te)色美味(wei)糕(gao)點(dian),相(xiang)傳(chuan)是(shi)源于東漢年間重九(jiu)登高賞菊的風(feng)俗而來(lai),它的制(zhi)作方式是(shi)先以面團包入糖(tang)和(he)果料餡(xian),然(ran)后經烤制(zhi)而成(cheng)的。食(shi)用起來(lai)香甜可口(kou),保存期長,并(bing)且外酥(su)里(li)軟(ruan),有濃郁的冰糖(tang)和(he)芝(zhi)麻清(qing)香味(wei),深受大家喜愛。
配(pei)料(liao)有(you)1200克(ke)(ke)面(mian)(mian)粉,飴糖(tang)、100克(ke)(ke)芝(zhi)麻(ma)油、堿(jian)和(he)適量清水,先將其(qi)拌和(he)均勻(yun),揉成(cheng)(cheng)(cheng)面(mian)(mian)團皮。另用400克(ke)(ke)面(mian)(mian)粉加200克(ke)(ke)芝(zhi)麻(ma)油,拌勻(yun)后擦成(cheng)(cheng)(cheng)油酥(su)面(mian)(mian)團。蜜(mi)桔餅(bing)、瓜條(tiao)分別切碎,放(fang)入(ru)(ru)熟(shu)面(mian)(mian)粉(炒熟(shu)的)、葡(pu)萄干、白糖(tang)、冰糖(tang)(砸成(cheng)(cheng)(cheng)屑末)、蜜(mi)桂花、芝(zhi)麻(ma)油(300克(ke)(ke)),一起拌勻(yun)成(cheng)(cheng)(cheng)餡(xian)。將面(mian)(mian)團皮搟成(cheng)(cheng)(cheng)圓形皮,包入(ru)(ru)油酥(su)面(mian)(mian)團捏攏,搓成(cheng)(cheng)(cheng)長圓條(tiao),揪成(cheng)(cheng)(cheng)80個面(mian)(mian)劑(ji),逐個豎著摁成(cheng)(cheng)(cheng)圓扁皮,包入(ru)(ru)餡(xian)料(liao),捏攏,在鋼制模具內(直徑6.6厘米、高2.6厘米),撳成(cheng)(cheng)(cheng)圓形餅(bing),磕出待烤(kao)。將圓形餅(bing)一面(mian)(mian)沾(zhan)上芝(zhi)麻(ma)仁,放(fang)入(ru)(ru)刷(shua)過(guo)油的烤(kao)盤內,置烤(kao)爐內,烤(kao)至金黃色出爐即成(cheng)(cheng)(cheng)。
