湖北九黃(huang)餅是荊州傳統特色美(mei)味糕點(dian),相傳是源于東漢年(nian)間重九登(deng)高賞(shang)菊的(de)(de)風俗而來(lai),它的(de)(de)制作方(fang)式是先以(yi)面團包入(ru)糖和果料餡,然(ran)后經烤制而成的(de)(de)。食用起(qi)來(lai)香(xiang)甜可口,保存期(qi)長,并且(qie)外酥里(li)軟,有濃郁(yu)的(de)(de)冰糖和芝(zhi)麻(ma)清香(xiang)味,深受大家喜(xi)愛。
配料(liao)有1200克面(mian)(mian)粉(fen),飴糖、100克芝(zhi)麻(ma)油(you)、堿和適量清水,先將其拌和均勻,揉成(cheng)(cheng)(cheng)(cheng)面(mian)(mian)團皮(pi)。另用(yong)400克面(mian)(mian)粉(fen)加(jia)200克芝(zhi)麻(ma)油(you),拌勻后擦(ca)成(cheng)(cheng)(cheng)(cheng)油(you)酥(su)面(mian)(mian)團。蜜桔餅(bing)、瓜條(tiao)分別切碎,放(fang)入熟(shu)面(mian)(mian)粉(fen)(炒熟(shu)的)、葡(pu)萄(tao)干、白糖、冰(bing)糖(砸成(cheng)(cheng)(cheng)(cheng)屑末)、蜜桂花、芝(zhi)麻(ma)油(you)(300克),一(yi)起拌勻成(cheng)(cheng)(cheng)(cheng)餡。將面(mian)(mian)團皮(pi)搟成(cheng)(cheng)(cheng)(cheng)圓(yuan)形皮(pi),包入油(you)酥(su)面(mian)(mian)團捏攏,搓成(cheng)(cheng)(cheng)(cheng)長圓(yuan)條(tiao),揪成(cheng)(cheng)(cheng)(cheng)80個面(mian)(mian)劑,逐個豎(shu)著(zhu)摁成(cheng)(cheng)(cheng)(cheng)圓(yuan)扁皮(pi),包入餡料(liao),捏攏,在鋼制模(mo)具內(nei)(nei)(直徑6.6厘(li)米(mi)、高2.6厘(li)米(mi)),撳成(cheng)(cheng)(cheng)(cheng)圓(yuan)形餅(bing),磕出(chu)待(dai)烤(kao)。將圓(yuan)形餅(bing)一(yi)面(mian)(mian)沾上芝(zhi)麻(ma)仁,放(fang)入刷(shua)過油(you)的烤(kao)盤(pan)內(nei)(nei),置烤(kao)爐(lu)內(nei)(nei),烤(kao)至金黃色出(chu)爐(lu)即成(cheng)(cheng)(cheng)(cheng)。
