乳山千層(ceng)餅(bing),又(you)叫乳山小(xiao)油(you)(you)餅(bing),是本地常(chang)見的一(yi)種家庭面食。其特點(dian)是層(ceng)多且薄,柔(rou)而不韌(ren),香中帶鮮,油(you)(you)而不膩,松軟可口。
乳山千(qian)(qian)(qian)層餅的制作并不(bu)(bu)復雜,先將(jiang)白面加水調(diao)揉好(hao),搟成薄頁,再(zai)把事先準備好(hao)的食油(you)、香油(you)、蔥末、雞(ji)蛋、鹽末、味(wei)精等配料按(an)比例調(diao)好(hao)抹于面頁上,然后將(jiang)面頁卷起盤成圓形再(zai)搟,如此重復若干次數(shu),但次數(shu)要適宜,這(zhe)樣做出的千(qian)(qian)(qian)層餅才具有“千(qian)(qian)(qian)層”的特色。另外(wai),千(qian)(qian)(qian)層餅下鍋烙時火不(bu)(bu)可太(tai)猛(meng),太(tai)猛(meng)則會“焦而(er)不(bu)(bu)脆(cui)”,太(tai)弱(ruo)則“硬而(er)不(bu)(bu)柔(rou)(rou)”,失去千(qian)(qian)(qian)層餅松脆(cui)柔(rou)(rou)軟的特色。
