1.發(fa)面(mian):頭一天先把雞蛋(雞蛋越多,會使果做出(chu)來的(de)果子越脆)加入(ru)面(mian)粉(fen)和成面(mian)團放(fang)置(zhi)在(zai)比(bi)較暖和的(de)地(di)方,使面(mian)能發(fa)起,面(mian)的(de)面(mian)積(ji)膨大到一倍就好了。加入(ru)堿水揉勻(yun)。
2.和(he)(he)(he)面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian):(1)先取(qu)(qu)一個盆(pen)放(fang)入面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)粉(fen)(fen)里面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)放(fang)雞蛋、牛奶、白(bai)糖、小蘇打和(he)(he)(he)成(cheng)白(bai)色硬面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)團(tuan),蓋上布(bu)(bu)(bu)在暖(nuan)氣邊放(fang)置。(2)在取(qu)(qu)一盆(pen)放(fang)入面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)粉(fen)(fen),將雞蛋打入然后把(ba)(ba)摻了紅糖、蜂蜜的牛奶倒入面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)粉(fen)(fen)里和(he)(he)(he)成(cheng)黑色硬面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)團(tuan),不要忘了放(fang)小蘇打(一點就行(xing))蓋上布(bu)(bu)(bu)在暖(nuan)和(he)(he)(he)的地方放(fang)置。(3)在取(qu)(qu)一盆(pen)放(fang)入少(shao)量面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)粉(fen)(fen)把(ba)(ba)熬好(hao)的熟(shu)油倒進去(qu)和(he)(he)(he)成(cheng)油酥面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian),(4)取(qu)(qu)一點發(fa)(fa)面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)和(he)(he)(he)油酥面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)和(he)(he)(he)白(bai)色硬面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)團(tuan)一起(qi)揉(rou)勻分成(cheng)若干(gan)小塊蓋上布(bu)(bu)(bu)在暖(nuan)氣邊放(fang)置。(5)取(qu)(qu)一點發(fa)(fa)面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)和(he)(he)(he)油酥面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)和(he)(he)(he)黑色硬面(mian)(mian)(mian)(mian)(mian)(mian)(mian)(mian)團(tuan)一起(qi)揉(rou)勻分成(cheng)若干(gan)小塊蓋上布(bu)(bu)(bu)在暖(nuan)氣邊放(fang)置。
3.搟(xian)面(mian):取兩塊白色(se)面(mian)團用大搟(xian)面(mian)杖把面(mian)團搟(xian)成面(mian)片,在(zai)把黑色(se)面(mian)團也搟(xian)開。
4.在(zai)白面(mian)片上(shang)(shang)刷上(shang)(shang)水把黑(hei)面(mian)片放在(zai)上(shang)(shang)面(mian),在(zai)刷上(shang)(shang)水把白面(mian)片放在(zai)上(shang)(shang)面(mian)。就是中間是黑(hei)色的上(shang)(shang)下(xia)是白色的,然后(hou)用(yong)刀(dao)切成長條狀(zhuang),幾個長條上(shang)(shang)下(xia)堆放,在(zai)中間用(yong)刀(dao)拉幾道口子(zi)(zi),做(zuo)成花式果(guo)子(zi)(zi)。下(xia)油鍋炸,要密切注(zhu)意(yi)火候,不然果(guo)子(zi)(zi)會(hui)被(bei)炸黑(hei)的。一(yi)般第一(yi)盤果(guo)子(zi)(zi)很可能(neng)會(hui)炸黑(hei),以后(hou)就有經驗了(le)。出鍋之后(hou)可以撒點兒糖,非(fei)常爽口。
選米,一般糯米為佳,做出(chu)來口感軟(ruan)糯香甜 ②將谷子輾(zhan)成(cheng)米粒(li)后磨(mo)成(cheng)粉 ③熬制白(bai)糖(tang)水與米粉和勻(番薯油果可不加糖(tang))④將和好的(de)面捏成(cheng)圓(yuan)球(qiu),進行油炸。(客家做法)
