諸老(lao)大,名光潮,小名景川,原籍紹(shao)興,兄弟三人(ren)(ren),排行居二,因(yin)身材魁偉,人(ren)(ren)稱“老(lao)大”。湖州(zhou)諸老(lao)大粽子店創始(shi)人(ren)(ren)。
諸(zhu)老(lao)大的創(chuang)始人(ren)原名(ming)諸(zhu)光潮(chao),幼年(nian)家貧,卻天性(xing)聰慧,勤(qin)奮好學,清(qing)光緒(xu)四年(nian)(1878)進(jin)湖州震遠同(tong)茶(cha)食(shi)鋪當學徒,3年(nian)滿師(shi)(shi),17歲(sui)便熟識茶(cha)食(shi)糕點制作技(ji)(ji)藝(yi),成(cheng)(cheng)為茶(cha)食(shi)行業(ye)青年(nian)師(shi)(shi)傅中(zhong)的佼佼者(zhe)。由于精(jing)通茶(cha)食(shi)制作技(ji)(ji)藝(yi),對粽子進(jin)行一系列改進(jin),改成(cheng)(cheng)四角長包(bao),創(chuang)制醬油鮮肉(rou)(rou)、雞肉(rou)(rou)、肉(rou)(rou)骨頭(tou)、蠶(can)豆(dou)、豌豆(dou)、豬油夾沙(sha)粽。在選(xuan)料、制作上(shang)十分講究:糯米要經過篩選(xuan),粒粒飽滿;選(xuan)用(yong)(yong)上(shang)好腿肉(rou)(rou),精(jing)肥(fei)分檔,按紋(wen)理(li)切肉(rou)(rou),可一咬(yao)即斷(duan);甜粽用(yong)(yong)肥(fei)豬板油,一層板油,一層白糖,連疊數層,用(yong)(yong)大石板加壓兩天,使板油吸飽糖汁;豆(dou)沙(sha)用(yong)(yong)優良(liang)品種“大紅袍”赤豆(dou)煮成(cheng)(cheng);裹箬采用(yong)(yong)安徽伏(fu)箬,烹煮時(shi),清(qing)香誘人(ren)。
一(yi)八(ba)(ba)八(ba)(ba)七年(nian),諸老(lao)大(da)(da)(da)(da)懷揣滿心志向,邁出(chu)獨立門戶的(de)步(bu)伐(fa)。那時江(jiang)南水鄉一(yi)帶(dai)的(de)粽(zong)(zong)(zong)(zong)子品種很簡單,僅赤豆粽(zong)(zong)(zong)(zong)、紅棗粽(zong)(zong)(zong)(zong)、咸肉粽(zong)(zong)(zong)(zong)等(deng),他大(da)(da)(da)(da)膽的(de)將咸粽(zong)(zong)(zong)(zong)改(gai)進(jin)成火腿粽(zong)(zong)(zong)(zong),使(shi)甜粽(zong)(zong)(zong)(zong)和肉粽(zong)(zong)(zong)(zong)成為諸老(lao)大(da)(da)(da)(da)粽(zong)(zong)(zong)(zong)子的(de)兩大(da)(da)(da)(da)特色,美味(wei)之名(ming)遍傳(chuan)江(jiang)南。一(yi)時民間食粽(zong)(zong)(zong)(zong)風潮大(da)(da)(da)(da)盛(sheng),也出(chu)現(xian)許多模(mo)仿者于戲院、書(shu)場、作(zuo)坊等(deng)場所叫賣粽(zong)(zong)(zong)(zong)子,但論(lun)味(wei)道、論(lun)形質、論(lun)名(ming)聲,都(dou)無法與諸老(lao)大(da)(da)(da)(da)相提并(bing)論(lun)。由于選料純正(zheng),包扎嚴密(mi),粽(zong)(zong)(zong)(zong)子不(bu)易變餿,諸老(lao)大(da)(da)(da)(da)名(ming)聲越(yue)(yue)來越(yue)(yue)大(da)(da)(da)(da),生意日益興旺。
自1906在(zai)府廟(miao)前青(qing)霅(zha)屏巷口開設諸老(lao)(lao)大粽(zong)(zong)(zong)子(zi)店(dian)正式經營以(yi)來,諸老(lao)(lao)大不但對甜粽(zong)(zong)(zong)和(he)肉粽(zong)(zong)(zong)做了(le)(le)(le)近一(yi)步的(de)(de)改進,而且按不同(tong)(tong)季節制作了(le)(le)(le)雞肉粽(zong)(zong)(zong)、排骨粽(zong)(zong)(zong)、蠶豆粽(zong)(zong)(zong)、豌豆粽(zong)(zong)(zong)等。同(tong)(tong)時在(zai)其(qi)(qi)他(ta)的(de)(de)商家仍擺攤(tan)提桶叫(jiao)賣的(de)(de)情況下,在(zai)包(bao)裝上采用了(le)(le)(le)糙紙包(bao)和(he)簧籃,并印了(le)(le)(le)「諸老(lao)(lao)大」三字的(de)(de)紅底黑(hei)字招牌(pai)紙,使他(ta)的(de)(de)攤(tan)子(zi)有(you)了(le)(le)(le)及其(qi)(qi)鮮明的(de)(de)品牌(pai)印記。諸老(lao)(lao)大的(de)(de)粽(zong)(zong)(zong)子(zi)自此更加供不應求,甚至在(zai)湖(hu)州府廟(miao)前青(qing)霅(zha)巷口的(de)(de)店(dian)鋪(pu)只(zhi)有(you)早市(shi)才能買到粽(zong)(zong)(zong)子(zi),開市(shi)不久就被搶購(gou)一(yi)空(kong),午(wu)市(shi)便只(zhi)兼(jian)營其(qi)(qi)他(ta)茶食。
諸老大(da)開店經營(ying)較(jiao)同(tong)業早了十數(shu)年,在品牌建立上(shang)更是下足(zu)功(gong)夫。除了在材料和(he)口味上(shang)面的堅持(chi),他十分(fen)重視店鋪(pu)的形(xing)象和(he)環境(jing)。黑(hei)底金字(zi)(zi)的「諸老大(da)」店招牌,以(yi)及兩旁「諸老大(da)粽(zong)(zong)子茶食店」八(ba)個字(zi)(zi),熱氣騰騰飄(piao)過幾條街口的粽(zong)(zong)香,還(huan)有(you)門(men)口川流不息搶購粽(zong)(zong)子的人潮,至今都(dou)深深留存(cun)在老一輩湖州人的心里。
