青椒鴨(ya)(ya)丁(ding)(ding)是北(bei)京市(shi)傳(chuan)統(tong)的(de)地方風味名(ming)菜,屬于京菜系(xi)。以青椒和嫩鴨(ya)(ya)脯肉為主料,滑炒而成。特點是鴨(ya)(ya)丁(ding)(ding)香嫩宜(yi)口,青椒脆嫩鮮美(mei)。將鴨(ya)(ya)脯肉切丁(ding)(ding)加蛋清(qing)、淀粉漿好;青椒切成丁(ding)(ding); 將鴨(ya)(ya)丁(ding)(ding)在溫(wen)油(you)中滑透,炒勺內加入(ru)底油(you)后放青椒丁(ding)(ding)、蔥、糯米、料酒、味精、精鹽、白(bai)糖、醬油(you)、鴨(ya)(ya)丁(ding)(ding), 加少許(xu)炊(chui)芡炒勻,出勺時淋上辣椒油(you)即可。
鴨丁香嫩宜口,青椒脆(cui)嫩鮮美。
1.將鴨脯肉切丁(ding)加蛋(dan)清(qing)、淀粉(fen)漿好;
2.青(qing)椒切成丁;
3.將鴨(ya)丁(ding)在溫油中滑透,炒勺內加(jia)入底(di)油后放青椒(jiao)丁(ding)、蔥、糯(nuo)米、料酒、味精、精鹽、白糖(tang)、醬油、鴨(ya)丁(ding), 加(jia)少許炊芡炒勻,出(chu)勺時(shi)淋上辣椒(jiao)油即可。
