金魚餃(jiao)(jiao)是湖北省傳統的地(di)方(fang)小吃,屬于鄂菜系。形(xing)似金魚,晶瑩(ying)剔透,餡成鮮香。把餃(jiao)(jiao)子(zi)的邊分成三份(fen),兩(liang)份(fen)稍短一份(fen)稍長,捏緊(jin)后短的兩(liang)邊向身部彎轉,裝潢上赤(chi)色的食物成眼睛(jing),尾(wei)部也捏成波浪形(xing)。
形(xing)似金魚,晶瑩剔透(tou),餡成鮮香。
蒸,澄(cheng)粉(fen)(fen)(fen)與生粉(fen)(fen)(fen)和勻,用(yong)(yong)(yong)開(kai)水燙熟(shu),加(jia)化豬油(you)揉(rou)勻成澄(cheng)粉(fen)(fen)(fen)面(mian)(mian)團,分(fen)(fen)少部分(fen)(fen)下米加(jia)入莧(xian)菜汁、熟(shu)蛋黃(huang)、可(ke)可(ke)粉(fen)(fen)(fen),揉(rou)成紅、黃(huang)、咖啡三色(se)面(mian)(mian)團待用(yong)(yong)(yong)。兩種肉末加(jia)上香菇、鹽、味精用(yong)(yong)(yong)豬油(you)炒成餡(xian)心備(bei)用(yong)(yong)(yong)。將白色(se)的澄(cheng)粉(fen)(fen)(fen)面(mian)(mian)團搓條、下劑、搓圓后壓扁,包入餡(xian)心,封好口,捏成金魚(yu)(yu)(yu)形坯子,魚(yu)(yu)(yu)尾用(yong)(yong)(yong)木(mu)梳平壓出花紋(wen)。用(yong)(yong)(yong)花鉗夾出魚(yu)(yu)(yu)背(bei)鰭,咖啡色(se)澄(cheng)面(mian)(mian)和黃(huang)色(se)澄(cheng)面(mian)(mian)做成魚(yu)(yu)(yu)后和魚(yu)(yu)(yu)眼圈,紅色(se)的澄(cheng)面(mian)(mian)搓圓鑲嵌成“魚(yu)(yu)(yu)眼珠”,最后放入盤中入籠蒸5、6分(fen)(fen)鐘至熟(shu),取(qu)出即成。
