色(se)香味俱(ju)全,是當地(di)群眾逢年過(guo)節、婚喪娶嫁款待賓客(ke)或祭祀(si)祖(zu)先和神靈(ling)的傳統食(shi)品(pin)。
鶴慶米(mi)糕,制(zhi)作精細,分(fen)干糕和水糕兩大類。
先將上(shang)等白米(mi)泡(pao)軟后,壓磨成粉(fen),然后用(yong)(yong)(yong)薄(bo)荷、橙皮汁加紅糖將粉(fen)碾(nian)細,用(yong)(yong)(yong)細篩篩入甑(zeng)子內,再(zai)用(yong)(yong)(yong)薄(bo)刀小(xiao)心劃成2寸、高1.5寸,厚(hou)0.5寸的小(xiao)塊,用(yong)(yong)(yong)大火(huo)蒸(zheng)熟。
高粉(fen)(fen)制成(cheng)后,加百(bai)分(fen)之一的糯米(mi)(mi)(mi)(mi)面(mian)(mian)(mian),蒸發亦如干糕(gao)(gao)(gao)(gao)(gao),但不(bu)加糖,待(dai)糕(gao)(gao)(gao)(gao)(gao)蒸熟后在(zai)把(ba)紅(hong)糖撒(sa)在(zai)上(shang)面(mian)(mian)(mian),待(dai)糖蒸化后在(zai)撒(sa)上(shang)芝麻或(huo)蘇子而成(cheng)。干糕(gao)(gao)(gao)(gao)(gao),又以喜慶(qing)干糕(gao)(gao)(gao)(gao)(gao)為(wei)(wei)上(shang)品,喜慶(qing)干糕(gao)(gao)(gao)(gao)(gao)又分(fen)夾層糕(gao)(gao)(gao)(gao)(gao)和色(se)(se)(se)糕(gao)(gao)(gao)(gao)(gao)兩種。夾層糕(gao)(gao)(gao)(gao)(gao)呈菱(ling)形,比普通(tong)干糕(gao)(gao)(gao)(gao)(gao)稍(shao)厚(hou)略大,中有紅(hong)糖、薄荷、橙皮、棗泥(ni)、龍眼的混合(he)夾層;色(se)(se)(se)糕(gao)(gao)(gao)(gao)(gao)呈正方形,中間有紅(hong)色(se)(se)(se)腰線(xian),表面(mian)(mian)(mian)為(wei)(wei)紅(hong)色(se)(se)(se)罩(zhao)面(mian)(mian)(mian),紅(hong)白分(fen)明,質(zhi)細而美觀。蒸米(mi)(mi)(mi)(mi)糕(gao)(gao)(gao)(gao)(gao)若用于待(dai)客時,表面(mian)(mian)(mian)加紅(hong)糖、玫瑰糖;用一祭祖供佛(fo)時,糕(gao)(gao)(gao)(gao)(gao)面(mian)(mian)(mian)須(xu)插鮮(xian)花。每年(nian)清明時節,青(qing)蠶豆成(cheng)熟上(shang)市,在(zai)米(mi)(mi)(mi)(mi)面(mian)(mian)(mian)中滲進(jin)豆米(mi)(mi)(mi)(mi)粉(fen)(fen),糕(gao)(gao)(gao)(gao)(gao)成(cheng)綠(lv)黃色(se)(se)(se),食(shi)味(wei)更(geng)佳(jia)。這種青(qing)豆米(mi)(mi)(mi)(mi)糕(gao)(gao)(gao)(gao)(gao),多用作上(shang)山掃(sao)墓和招待(dai)嘉賓貴客。
