江蘇(su)鹽城(cheng)名(ming)點(dian),已有100多年歷(li)史,與(yu)伍(wu)佑糖(tang)麻花齊名(ming)于(yu)淮、揚各地。配料用面粉、油、糖(tang)和少(shao)量(liang)桔皮。餅為正(zheng)方形略長,呈(cheng)嫩黃色,餅面敷有芝麻。味香(xiang)、甜、酥(su)(su)、脆(cui)。存放(fang)兩(liang)個月不致(zhi)變質。便于(yu)攜帶保管。干吃香(xiang)酥(su)(su)爽口,不覺(jue)干燥(zao);水(shui)泡易于(yu)消(xiao)化(hua),是旅游、饋贈佳品。
大岡脆(cui)餅制(zhi)作的(de)原材料十(shi)分普(pu)通,制(zhi)作過程不(bu)太復雜(za),它(ta)不(bu)使用(yong)添加劑、防(fang)腐劑之類(lei)有(you)損人類(lei)健(jian)康(kang)的(de)佐(zuo)料。用(yong)來烤制(zhi)脆(cui)餅的(de)燃(ran)料既普(pu)通易覓,又要求獨特,它(ta)不(bu)能(neng)使用(yong)電力,煤炭等現代能(neng)源,而僅用(yong)耐燒(shao)的(de)樹(shu)根作燃(ran)料,其優點在(zai)(zai)于這種燃(ran)料在(zai)(zai)燃(ran)燒(shao)完畢后,仍能(neng)產生大量余熱,將(jiang)餅烤得干、脆(cui)。
1、生產工具:攪(jiao)伴機、餅響子、銅火(huo)爐、制作臺等。
2、生(sheng)產原料(liao):面粉(fen)、植物油、白糖、堿、芝麻。
3、生(sheng)產工(gong)藝:將(jiang)(jiang)面粉倒入(ru)(ru)攪(jiao)(jiao)(jiao)拌(ban)機(ji)中待拌(ban)熟(shu)(shu)后(hou)(hou)加入(ru)(ru)發酵成(cheng)(cheng)(cheng)功的(de)(de)(de)小鋯,再(zai)(zai)(zai)次反復進行攪(jiao)(jiao)(jiao)拌(ban),將(jiang)(jiang)熟(shu)(shu)料(liao)從機(ji)中取出放(fang)在(zai)(zai)工(gong)作(zuo)臺上(shang),讓(rang)其自行發醇(chun)(大約需要12小時(shi)(shi)(shi)左(zuo)右(you)),將(jiang)(jiang)熟(shu)(shu)料(liao)再(zai)(zai)(zai)倒入(ru)(ru)攪(jiao)(jiao)(jiao)拌(ban)機(ji)中,同時(shi)(shi)(shi)將(jiang)(jiang)堿兌成(cheng)(cheng)(cheng)少(shao)量的(de)(de)(de)水稀釋,再(zai)(zai)(zai)次攪(jiao)(jiao)(jiao)勻(yun)放(fang)在(zai)(zai)工(gong)作(zuo)臺上(shang),然后(hou)(hou)配制脆(cui)餅(bing)(bing)(bing)的(de)(de)(de)芯料(liao):植物油、白(bai)糖(tang)加面粉攪(jiao)(jiao)(jiao)拌(ban),即強制成(cheng)(cheng)(cheng)芯料(liao),后(hou)(hou)將(jiang)(jiang)熟(shu)(shu)料(liao)切成(cheng)(cheng)(cheng)小塊,磋(cuo)成(cheng)(cheng)(cheng)圓形直徑(jing)4公分,再(zai)(zai)(zai)將(jiang)(jiang)一(yi)包芯料(liao)包捏在(zai)(zai)中間,用(yong)餅(bing)(bing)(bing)響子壓(ya)成(cheng)(cheng)(cheng)條形,折(zhe)成(cheng)(cheng)(cheng)三折(zhe)共十八層(ceng),即可形成(cheng)(cheng)(cheng)雛形脆(cui)餅(bing)(bing)(bing),后(hou)(hou)在(zai)(zai)脆(cui)餅(bing)(bing)(bing)上(shang)刷(shua)一(yi)點水,將(jiang)(jiang)芝麻灑在(zai)(zai)雛形的(de)(de)(de)脆(cui)餅(bing)(bing)(bing)上(shang),用(yong)手輕輕的(de)(de)(de)壓(ya)實(shi),將(jiang)(jiang)雛形脆(cui)餅(bing)(bing)(bing)粘(zhan)貼在(zai)(zai)事先生(sheng)火(huo)的(de)(de)(de)銅(tong)爐(lu)(lu)四周(zhou),再(zai)(zai)(zai)用(yong)濕潤的(de)(de)(de)毛巾將(jiang)(jiang)爐(lu)(lu)口封蓋(gai)好,烘(hong)烤的(de)(de)(de)時(shi)(shi)(shi)間一(yi)般(ban)在(zai)(zai)4—5小時(shi)(shi)(shi)后(hou)(hou),脆(cui)餅(bing)(bing)(bing)便(bian)制成(cheng)(cheng)(cheng)出爐(lu)(lu)。
