徽州多(duo)山(shan)(shan),宜種苞(bao)(bao)蘆(玉(yu)米)。苞(bao)(bao)蘆磨成粉,用(yong)(yong)開水(shui)燙后揉成面團(tuan),用(yong)(yong)豬(zhu)板油加鮮(xian)菜和腌雪里蕻為(wei)(wei)餡。取(qu)一(yi)份玉(yu)米面團(tuan)放入(ru)一(yi)份餡心(xin),做成小圓餅形(xing),入(ru)平鍋燒熟(shu)。餅被(bei)烙得(de)兩面金黃,外皮焦脆,有(you)玉(yu)米香,餡心(xin)油潤而有(you)脂油香,味鮮(xian)可口。徽州山(shan)(shan)區稱(cheng)(cheng)餅為(wei)(wei)馃(guo),稱(cheng)(cheng)玉(yu)米為(wei)(wei)苞(bao)(bao)蘆,此餅用(yong)(yong)玉(yu)米粉為(wei)(wei)皮面,故名“苞(bao)(bao)蘆馃(guo)”。“苞(bao)(bao)蘆馃(guo)”吃了(le)最(zui)耐(nai)饑,故深受體(ti)力勞動者的歡迎。徽州山(shan)(shan)區有(you)民謠曰(yue):“手捧苞(bao)(bao)蘆馃(guo),腳踩一(yi)爐火,除(chu)了(le)神仙就數我。”傳(chuan)神地道出了(le)山(shan)(shan)里人(ren)偏愛吃苞(bao)(bao)蘆馃(guo)的習(xi)俗。
用(yong)山區的山苞(bao)蘆為(wei)主(zhu)原料制(zhi)成(cheng)。山苞(bao)蘆為(wei)山上種(zhong)植的一種(zhong)玉米,生(sheng)長期約140天,其味甜清,營(ying)養成(cheng)份高。將(jiang)山玉米磨成(cheng)細粉,經細粉籮篩去皮層,和水(shui)攪拌煮成(cheng)糊狀(zhuang),冷卻凝固,再用(yong)特制(zhi)的弓刨成(cheng)薄(bo)片(pian)(pian)(pian),然后(hou)將(jiang)薄(bo)片(pian)(pian)(pian)置于竹(zhu)匾(bian)上曬干即成(cheng)。食用(yong)時(shi),將(jiang)薄(bo)片(pian)(pian)(pian)投入滾油(you)中(zhong)炸,薄(bo)片(pian)(pian)(pian)舒展(zhan)膨(peng)脹上浮(fu),即可撈起。“苞(bao)蘆松”清香松脆,宜作(zuo)茶(cha)食及佐餐食品(pin)。
