諸老(lao)大粽(zong)子(zi)是產自浙(zhe)江省(sheng)湖州(zhou)市的著名傳統小吃,是湖州(zhou)“四大名點”(諸老(lao)大粽(zong)子(zi)、周生(sheng)記餛(hun)飩、丁蓮(lian)芳千張包子(zi)、震遠(yuan)同(tong)玫瑰酥糖(tang))之(zhi)一(yi),湖州(zhou)“中(zhong)華老(lao)字(zi)號”之(zhi)一(yi)。屬于端午節節日美食。
清(qing)香(xiang)撲鼻、肉質鮮嫩(nen),油光閃亮。有(you)(you)開胃、味(wei)甘性溫,有(you)(you)補(bu)中益氣(qi)、養血安神的(de)功效。諸老大粽子最出名的(de)是細(xi)沙(sha)甜(tian)(tian)粽和鮮肉咸粽。甜(tian)(tian)粽中特制的(de)玫瑰細(xi)沙(sha),烏(wu)黑油亮,味(wei)甜(tian)(tian)而(er)糯;咸粽精選腿肉切成條狀分布全粽,首尾均有(you)(you)餡心,味(wei)鮮而(er)香(xiang)。這種粽子伏天存(cun)放一周不(bu)餿,冬季半(ban)月不(bu)變(bian)質。
諸老(lao)大(da)粽(zong)(zong)子(zi)最(zui)出名(ming)的(de)是細(xi)沙(sha)(sha)甜(tian)粽(zong)(zong)和鮮(xian)肉(rou)(rou)(rou)咸(xian)粽(zong)(zong)。甜(tian)粽(zong)(zong)中特(te)制(zhi)(zhi)的(de)玫(mei)瑰細(xi)沙(sha)(sha),烏黑油(you)亮,味(wei)甜(tian)而(er)糯;咸(xian)粽(zong)(zong)精選腿肉(rou)(rou)(rou)切成條狀分布(bu)全(quan)粽(zong)(zong),首尾均有(you)餡(xian)心,味(wei)鮮(xian)而(er)香(xiang)。這(zhe)種(zhong)(zhong)粽(zong)(zong)子(zi)伏天(tian)存放一(yi)周(zhou)不(bu)餿,冬(dong)季半月(yue)不(bu)變質(zhi)。諸老(lao)大(da)粽(zong)(zong)子(zi)膾炙人口,主要(yao)賴其(qi)制(zhi)(zhi)作精細(xi):一(yi)是選料(liao)特(te)別認真。選用(yong)(yong)(yong)的(de)糯米(mi)要(yao)"通變",經粒(li)粒(li)相似,顆顆飽滿(man)壯實。做細(xi)沙(sha)(sha)用(yong)(yong)(yong)的(de)赤豆(dou),必用(yong)(yong)(yong)"大(da)紅袍",豬油(you)用(yong)(yong)(yong)上好的(de)肥豬板油(you)。裹咸(xian)粽(zong)(zong)選用(yong)(yong)(yong)腿肉(rou)(rou)(rou),精肥分檔切割(ge)。箬葉(xie)選用(yong)(yong)(yong)清香(xiang)撲(pu)鼻的(de)徽州伏箬。二是操作技術過硬。裹粽(zong)(zong)用(yong)(yong)(yong)力(li)不(bu)松(song)不(bu)緊(jin),粽(zong)(zong)子(zi)四(si)角(jiao)密(mi)縫,外形(xing)挺括修長,打結美(mei)觀,煮粽(zong)(zong)時火候(hou)恰到(dao)好處,猛火、平火揀洗淘凈,外形(xing)燜火間隔使用(yong)(yong)(yong)。三(san)是色、香(xiang)、味(wei)俱全(quan)。色:甜(tian)粽(zong)(zong)米(mi)白糯軟(ruan),里嵌烏黑發亮油(you)晶晶的(de)細(xi)沙(sha)(sha);咸(xian)粽(zong)(zong)呈醬黃色,肉(rou)(rou)(rou)質(zhi)鮮(xian)嫩,油(you)光(guang)閃(shan)亮。香(xiang):除(chu)原料(liao)本身(shen)混合香(xiang)外,還夾有(you)一(yi)種(zhong)(zhong)玫(mei)瑰香(xiang),主要(yao)是細(xi)沙(sha)(sha)中摻入(ru)自(zi)制(zhi)(zhi)的(de)玫(mei)瑰露。味(wei):餡(xian)心和糯米(mi)都有(you)科學配方,吃起來(lai)美(mei)味(wei)可口。四(si)是講究清潔衛生,采用(yong)(yong)(yong)多道消毒措施。如處理粽(zong)(zong)子(zi)做到(dao)三(san)要(yao)三(san)不(bu),用(yong)(yong)(yong)具經常日光(guang)殺菌等。五是適合時令,品(pin)種(zhong)(zhong)多樣化。
