諸老大粽子(zi)是(shi)產自浙江省湖州市的著(zhu)名傳統小吃,是(shi)湖州“四大名點(dian)”(諸老大粽子(zi)、周生(sheng)記餛飩、丁蓮芳千(qian)張包子(zi)、震遠(yuan)同玫(mei)瑰酥糖)之一,湖州“中華老字號”之一。屬于端午節(jie)節(jie)日美食。
清(qing)香撲鼻、肉(rou)質鮮嫩(nen),油(you)光閃(shan)亮(liang)。有開(kai)胃(wei)、味甘(gan)性溫,有補(bu)中益氣、養血安神的(de)功效。諸老大(da)粽(zong)子最(zui)出名的(de)是(shi)細(xi)沙甜(tian)粽(zong)和鮮肉(rou)咸粽(zong)。甜(tian)粽(zong)中特(te)制的(de)玫(mei)瑰細(xi)沙,烏黑(hei)油(you)亮(liang),味甜(tian)而糯;咸粽(zong)精選(xuan)腿肉(rou)切成條狀(zhuang)分布全(quan)粽(zong),首尾(wei)均有餡(xian)心,味鮮而香。這種粽(zong)子伏天(tian)存放一周不餿,冬季半月不變質。
諸老(lao)(lao)大粽(zong)(zong)子(zi)(zi)最出名的(de)(de)是(shi)(shi)(shi)細(xi)沙(sha)(sha)(sha)甜粽(zong)(zong)和鮮肉咸粽(zong)(zong)。甜粽(zong)(zong)中(zhong)特(te)(te)制(zhi)的(de)(de)玫(mei)瑰(gui)(gui)細(xi)沙(sha)(sha)(sha),烏(wu)黑油(you)(you)亮(liang),味(wei)甜而糯;咸粽(zong)(zong)精(jing)選(xuan)腿(tui)肉切成條狀(zhuang)分(fen)布全粽(zong)(zong),首(shou)尾均(jun)有餡心,味(wei)鮮而香(xiang)。這(zhe)種(zhong)粽(zong)(zong)子(zi)(zi)伏天(tian)存放一(yi)(yi)周(zhou)不(bu)餿,冬季半月(yue)不(bu)變質(zhi)(zhi)。諸老(lao)(lao)大粽(zong)(zong)子(zi)(zi)膾炙人口(kou)(kou),主要(yao)賴其制(zhi)作精(jing)細(xi):一(yi)(yi)是(shi)(shi)(shi)選(xuan)料(liao)特(te)(te)別(bie)認真。選(xuan)用(yong)(yong)的(de)(de)糯米(mi)要(yao)"通變",經粒粒相似,顆顆飽(bao)滿(man)壯實。做(zuo)細(xi)沙(sha)(sha)(sha)用(yong)(yong)的(de)(de)赤(chi)豆,必(bi)用(yong)(yong)"大紅袍",豬(zhu)油(you)(you)用(yong)(yong)上好的(de)(de)肥豬(zhu)板油(you)(you)。裹咸粽(zong)(zong)選(xuan)用(yong)(yong)腿(tui)肉,精(jing)肥分(fen)檔切割(ge)。箬葉(xie)選(xuan)用(yong)(yong)清香(xiang)撲鼻的(de)(de)徽州伏箬。二(er)是(shi)(shi)(shi)操作技術過硬。裹粽(zong)(zong)用(yong)(yong)力不(bu)松不(bu)緊,粽(zong)(zong)子(zi)(zi)四角密(mi)縫(feng),外(wai)形(xing)挺括修長,打(da)結美觀,煮粽(zong)(zong)時(shi)(shi)火(huo)(huo)候(hou)恰到好處(chu),猛火(huo)(huo)、平火(huo)(huo)揀洗(xi)淘凈,外(wai)形(xing)燜火(huo)(huo)間隔使(shi)用(yong)(yong)。三(san)是(shi)(shi)(shi)色(se)、香(xiang)、味(wei)俱(ju)全。色(se):甜粽(zong)(zong)米(mi)白糯軟,里嵌烏(wu)黑發亮(liang)油(you)(you)晶(jing)晶(jing)的(de)(de)細(xi)沙(sha)(sha)(sha);咸粽(zong)(zong)呈醬黃色(se),肉質(zhi)(zhi)鮮嫩(nen),油(you)(you)光閃亮(liang)。香(xiang):除(chu)原料(liao)本身混合(he)香(xiang)外(wai),還夾有一(yi)(yi)種(zhong)玫(mei)瑰(gui)(gui)香(xiang),主要(yao)是(shi)(shi)(shi)細(xi)沙(sha)(sha)(sha)中(zhong)摻(chan)入(ru)自制(zhi)的(de)(de)玫(mei)瑰(gui)(gui)露。味(wei):餡心和糯米(mi)都有科學(xue)配方,吃(chi)起來(lai)美味(wei)可口(kou)(kou)。四是(shi)(shi)(shi)講究清潔衛生,采用(yong)(yong)多道消毒(du)措(cuo)施。如處(chu)理粽(zong)(zong)子(zi)(zi)做(zuo)到三(san)要(yao)三(san)不(bu),用(yong)(yong)具經常日(ri)光殺(sha)菌(jun)等。五是(shi)(shi)(shi)適合(he)時(shi)(shi)令(ling),品種(zhong)多樣化。
