梅(mei)菉麻(ma)通是吳(wu)川糖果生(sheng)產(chan)中(zhong)的(de)獨特(te)名優產(chan)品(pin),該產(chan)品(pin)系(xi)用(yong)大糯米、水芋頭、白(bai)(bai)糖、芝麻(ma)等原料,經過特(te)殊(shu) 的(de)處理方法和(he)制作(zuo)技(ji)術做成(cheng)(cheng)(cheng)半成(cheng)(cheng)(cheng)品(pin),曬干后隨時(shi)備(bei)用(yong)。再加工制作(zuo)時(shi),將此半成(cheng)(cheng)(cheng)品(pin)先后投進(jin)分別用(yong)文武火(huo)煮(zhu)成(cheng)(cheng)(cheng)不同溫度(du)的(de)兩個(ge)油鍋(guo)中(zhong)去(qu)炸(zha),炸(zha)至膨脹適度(du),取(qu)出淋上(shang)白(bai)(bai)糖膠,灑上(shang)芝麻(ma)即成(cheng)(cheng)(cheng)。成(cheng)(cheng)(cheng)品(pin)粗如甘蔗,長(chang)7~8公分,中(zhong)空充滿泡沫,入口(kou)松脆香甜,是糖果中(zhong)佳品(pin)。麻(ma)通的(de)制作(zuo),在吳(wu)川已有一(yi)百多年歷(li)史,但其(qi)制作(zuo)技(ji)術秘(mi)傳,直至60年代才公開。
吳(wu)(wu)川(chuan)(chuan)獨(du)(du)有(you)的(de)風(feng)味小(xiao)食(shi)(shi)(shi)麻(ma)(ma)(ma)通(tong)(tong)(tong)形似香蕉(jiao),色澤(ze)金黃(huang),入口(kou)酥(su)脆,咀嚼(jiao)無渣,香甜可(ke)口(kou),是吳(wu)(wu)川(chuan)(chuan)傳(chuan)統的(de)小(xiao)食(shi)(shi)(shi),在清朝已有(you)制(zhi)作。麻(ma)(ma)(ma)通(tong)(tong)(tong)是梅(mei)錄頭老人陳(chen)華(hua)堂(tang)的(de)絕藝,只有(you)陳(chen)氏(shi)一家懂(dong)得制(zhi)作。制(zhi)作麻(ma)(ma)(ma)通(tong)(tong)(tong)要(yao)精選(xuan)(xuan)香膠糯米(mi),用人工(gong)搗(dao)成粉(fen),再經炊、曬、火(huo)局、炸(zha)等工(gong)序,前(qian)后歷時十五日才能制(zhi)成。由(you)于(yu)選(xuan)(xuan)料難、工(gong)序多、制(zhi)作復雜、利潤薄(bo),陳(chen)家停止制(zhi)作麻(ma)(ma)(ma)通(tong)(tong)(tong)已有(you)幾十年。后來有(you)關部門(men)的(de)熱心動員下,陳(chen)家決定重操舊業,讓(rang)麻(ma)(ma)(ma)通(tong)(tong)(tong)這一吳(wu)(wu)川(chuan)(chuan)風(feng)味小(xiao)食(shi)(shi)(shi)重出(chu)江湖,并在吳(wu)(wu)川(chuan)(chuan)市第三屆美(mei)食(shi)(shi)(shi)節上(shang)呈獻出(chu)來,讓(rang)廣(guang)大市民品(pin)嘗到風(feng)味獨(du)(du)特(te)(te)的(de)吳(wu)(wu)川(chuan)(chuan)傳(chuan)統小(xiao)食(shi)(shi)(shi)。在美(mei)食(shi)(shi)(shi)節上(shang)麻(ma)(ma)(ma)通(tong)(tong)(tong)的(de)美(mei)味受到廣(guang)泛的(de)好評。吳(wu)(wu)川(chuan)(chuan)市土(tu)特(te)(te)產專賣(mai)店有(you)麻(ma)(ma)(ma)通(tong)(tong)(tong)出(chu)售。
